Ingredients
Herekayi ( Ridge Gourd ) – 1
Gram Flour – 1 Cup
Onion – ¼ Cup Finely Chopped
Coriander Leaves – ¼ Cup Finely Chopped
Red Chilli Powder – 1 Tbsp
Black Pepper Powder – ¼ tbsp
Baking Soda – Pinch
Water
Oil for Frying
Salt to Taste
Method
- Add Gram flour, Onion, Coriander Leaves, Red Chilli Powder, Black Pepper Powder, Baking Soda to a bowl mix well adding enough water to make medium Consistency Batter. Keep it Aside.
- Chop Ridge Gourd to Thin long Slices.
- Heat Oil in a Pan. Check if its hot enough by adding a drop of batter to it. If it Raises to the Surface immediately then oil temperature is Perfect for frying.
- Dip each slice of Ridge gourd in the batter. It should be Coated both sides properly. And fry in hot oil until its golden and crispy. Take out on to a Kitchen paper towel.
- Sprinkle Black pepper Powder and Salt.
Hot Herekayi bajji is Ready to Serve.
