Ingredients
Round Brinjal – 5
Onion – 1
Green Chilli – 2
Ginger – 1 inch
Garlic – 4
Grated Coconut – ½ Cup
Coriander Powder – 1 tbsp
Red Chilli Powder – 1 tbsp
Cinnamon Powder – Pinch
Clove Powder – Pinch
Coriander Leaves – ¼ Cup
Turmeric – ¼ tbsp
Oil – 6 tbsp
Mustard Seeds – 1 tbsp
Water – ¼ Cup
Salt to Taste
Method
- Chop Brinjal to get four equal Pieces without removing the stalk. Make sure no piece get separate. Check inside and remove if any worms or spoiled part.
- Heat 1 tbsp of oil in a pan. Add Chopped ginger, Garlic, Onion fry until its light brown.
- Add Cinnamon Powder, Clove Powder, Coriander Leaves fry about 1 Minute.
- Add Grated Coconut, Coriander Powder, Red Chilli Powder fry about 1 minute. Let it Cool down. Add to a blender and blend it to a nice paste.
- Heat oil in a Pressure cooker. Add Mustard Seeds wait until it Crackle.
- Add Chopped Brinjal fry about 1 minute.
- Add Blended paste, salt, water mix well and Pressure cook for about 2 whistles.
- Once its Cooked Check the Consistency if its too thick add little water and let it boil for a minute. Add salt if needed.
Hot Ennegayi is Ready to Serve.
