Preparation time: 20 Minutes | Cook time: 20 Minutes


For Dough

Maida(All purpose flour) – 1 cup

Ajwain – ½ tbsp

Oil – ¼ cup

Salt to taste

For stuffing

Big Potato – 3

Frozen Green peas – ½ cup

Green chilli – 2 Finely chopped

Grated Ginger – ½ tbsp

Jeera – 1 tbsp

Hing – ¼ tbsp

Coriander seeds – ¼ tbsp

Coriander powder – 1 tbsp

Red chilli powder – 1 tbsp

Garam masala powder – ¼ tbsp

Lemon juice – ½ tbsp

Oil – 2 tbsp

Salt to taste

Oil for frying


  • Dough Preparation: Add maida, ajwain, salt and oil to a bowl. Mix well for 5 minutes and keep it aside for 15 minutes then by adding enough water. Make a soft dough.

Potato stuffing 

  • Boil potatoes in a pressure cooker or microwave until it is soft.
  • Drain and Peel Potatoes. Mash it completely.
  • Heat oil in a pan. Add hing and jeera wait until it crackle.
  • Add coriander seeds and saute for a minute.
  • Add green chilli and grated ginger and saute for 1 minute.
  • Add mashed potatoes and green peas. Cook about 1 minute.
  • Add coriander powder, red chilli powder, garam masala powder, lemon juice and salt. Mix well and cook about 5 minutes. Takeout to a serving bowl.

Samosa preparation

  • Make small balls out of dough and roll it to medium thickness oval shape. Cut it in to two equal parts.
  • Apply some water to the straight edge of rolled dough. Join two edges by bringing the watered edge on the other plain edge. Press it and seal.
  • Fill this samosa cone with the prepared potato stuffing. Apply some water to the edges and make a fold in the middle of one edge and seal it by pressing both the edges. Prepare all samosas in the same way.
  • For frying heat oil in a pan on medium flame.
  • Once oil is hot. Deep fry samosas until it turns golden brown. Takeout to a serving plate.

Yummy Samosa is ready to serve with tomato ketchup and Red Chutney(Red Chutney for Chats)


Note: Fry samosas in medium heated oil. This will take long time to fry but samosas will be properly cooked and crispy.
